Fresh spinach leaves are quickly stir-fried with aromatic garlic and seasoned with a savoury blend of fish sauce, sugar and black pepper. Thai Spinach With Black Pepper & Garlic

Ingredients

  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic, coarsely chopped
  • 8 -10 cups spinach leaves, loosely packed
  • 2 tablespoons fish sauce
  • 2 teaspoons sugar
  • 1/2 teaspoon black pepper
  • 1/4 cup water

Method

  1. Warm the vegetable oil in a large, heavy skillet or wok for about 1 min.
  2. Add the coarsely chopped garlic to the hot oil and toss it well.
  3. Place the loosely packed spinach leaves into the skillet.
  4. Gently turn the pile of spinach to heat the leaves.
  5. Pour in the fish sauce, sugar, black pepper and water.
  6. Toss everything together thoroughly.
  7. Cook the mixture, turning it often, for 1-2 min. until the spinach is wilted and tender.
  8. Transfer the spinach along with all the sauce to a deep platter and serve hot, warm, or at room temperature.
