Thai Spinach With Black Pepper & Garlic
This vibrant Thai spinach dish is a speedy side, ready in under 20 minutes. Fresh spinach leaves are quickly stir-fried with aromatic garlic and seasoned with a savoury blend of fish sauce, sugar and black pepper. The result is a tender, flavourful vegetable dish that can be served hot, warm or at room temperature, making it a versatile addition to any meal.
Ingredients
- 2 tablespoons vegetable oil
- 1 teaspoon garlic, coarsely chopped
- 8 -10 cups spinach leaves, loosely packed
- 2 tablespoons fish sauce
- 2 teaspoons sugar
- 1/2 teaspoon black pepper
- 1/4 cup water
Method
- Warm the vegetable oil in a large, heavy skillet or wok for about 1 min.
- Add the coarsely chopped garlic to the hot oil and toss it well.
- Place the loosely packed spinach leaves into the skillet.
- Gently turn the pile of spinach to heat the leaves.
- Pour in the fish sauce, sugar, black pepper and water.
- Toss everything together thoroughly.
- Cook the mixture, turning it often, for 1-2 min. until the spinach is wilted and tender.
- Transfer the spinach along with all the sauce to a deep platter and serve hot, warm, or at room temperature.
