Texas Style Lasagna
This Italian-inspired dish offers a Tex-Mex twist, using torn tortillas in place of pasta sheets. It features a savoury base of seasoned ground beef simmered with tomatoes, sauce and green chillies. Layers are built with this meat sauce, tortilla strips, a cottage cheese mixture and shredded Monterey Jack cheese, then baked until golden and bubbly. Allow it to rest briefly before serving for the best texture. The entire process takes around 60 minutes to complete.
Ingredients
- 1 1/2 lbs hamburger, browned & drained
- 1 teaspoon seasoning salt
- 1 (1 1/4 ounce) package taco seasoning mix
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (15 ounce) can tomato sauce
- 1 (4 ounce) can green chilies
- 16 ounces small curd cottage cheese
- 2 eggs, beaten
- tortilla, torn into strips
- 3 1/2-4 cups shredded monterey jack cheese
Method
- Brown the meat in a large skillet, then drain off any excess fat.
- Stir in the seasoning salt, taco seasoning mix, diced tomatoes, tomato sauce and green chillies.
- Combine everything thoroughly and let it simmer without a lid for 15 to 20 minutes.
- In a separate bowl, mix together the cottage cheese and the beaten eggs.
- In a greased 13x9x2 inch baking dish, create a first layer using half of the meat sauce, half of the torn tortillas, half of the cottage cheese mix and half of the shredded cheese.
- Repeat the layering process with the remaining ingredients. Bake uncovered at 350 degrees for 30 minutes.
- Once baked, allow the lasagna to stand for 10 minutes before cutting.
