Tex-Mex Cheese Dip
This snack offers a twist on the classic chips and dip. Feta cheese is blended with soured cream to create a creamy base, which is then topped with sliced jalapeños, chopped red chilli, sweetcorn and fresh coriander leaves. It's a simple, flavourful dish that comes together in just 10 minutes, serving eight people. Enjoy it with a side of tortilla chips for dipping.
Ingredients
- 2 x 200g packs feta cheese crumbled
- 200ml soured cream
- 3 tbsp sliced jalapeno chilli
- 1 red chilli (deseeded if you don't like it too hot), finely chopped
- 1/2 x 198g can sweetcorn drained
- small handful coriander leaves
- tortilla chips (or gluten-free alternative), to serve
Method
- Combine the crumbled feta and soured cream in a food processor and blend them together.
- Transfer the blended mixture onto a large plate or serving platter, spreading it out evenly.
- Scatter the sliced jalapeño chilli, finely chopped red chilli, drained sweetcorn and coriander leaves over the top of the cheese mixture.
- Serve the dip immediately with a bowl of tortilla chips on the side for dipping.
