Tex-Mex Cheese Dip

This snack offers a twist on the classic chips and dip. Feta cheese is blended with soured cream to create a creamy base, which is then topped with sliced jalapeños, chopped red chilli, sweetcorn and fresh coriander leaves. It's a simple, flavourful dish that comes together in just 10 minutes, serving eight people. Enjoy it with a side of tortilla chips for dipping.

Tex-Mex Cheese Dip

Ingredients

  • 2 x 200g packs feta cheese crumbled
  • 200ml soured cream
  • 3 tbsp sliced jalapeno chilli
  • 1 red chilli (deseeded if you don't like it too hot), finely chopped
  • 1/2 x 198g can sweetcorn drained
  • small handful coriander leaves
  • tortilla chips (or gluten-free alternative), to serve

Method

  1. Combine the crumbled feta and soured cream in a food processor and blend them together.
  2. Transfer the blended mixture onto a large plate or serving platter, spreading it out evenly.
  3. Scatter the sliced jalapeño chilli, finely chopped red chilli, drained sweetcorn and coriander leaves over the top of the cheese mixture.
  4. Serve the dip immediately with a bowl of tortilla chips on the side for dipping.
