Teriyaki Meatballs With Red Bell Peppers and Pineapple
This Japanese-inspired dish is a favourite for family meals. It combines ready-made teriyaki chicken meatballs with sautéed onions and red peppers in a savoury sauce. Fresh pineapple chunks are stirred in at the end for a sweet and sour note. The entire meal is served over hot cooked rice, making it a complete and satisfying dinner that comes together in about 30 minutes.
Ingredients
- 1 tablespoon olive oil
- 1 large onion, sliced into long skinny strips
- 2 red bell peppers, sliced into long skinny strips

- 1 cup fresh pineapple chunk
- 2 tablespoons hot water, to cut the saltiness of the sauce to fit your preference
- 4 -6 servings of hot cooked rice
Method
- Begin by preparing your hot cooked rice before starting the other components to ensure everything finishes together.
- In a large, high-sided skillet, warm the olive oil. Cook the sliced onions and red bell peppers for about 10 minutes, until they are softened but still retain some bite.
- Introduce the package of fully cooked Aidells Chicken Teriyaki Meatballs to the skillet along with 1/4 cup of your chosen teriyaki sauce.
- To adjust the saltiness of the sauce to your liking, stir in hot water. A typical ratio is 1/8 cup of water for every 1/4 cup of sauce.
- Turn off the heat and add the fresh pineapple chunks, allowing them to warm through without cooking to preserve their zesty flavour.
- Spoon the meatball and vegetable mixture over portions of hot rice to serve.
