Tasty Shrimp Toast
This recipe recreates the classic Asian restaurant favourite of shrimp toast. A seasoned paste of minced shrimp, water chestnuts and egg is spread onto triangles of white bread, then fried until golden and crisp. The result is a deliciously savoury and crunchy appetiser or snack that is perfect for sharing. It takes only about 20 minutes to prepare and cook, yielding six generous servings.
Ingredients
- 1/2 lb shrimp, shelled and deveined
- 4 water chestnuts, chopped
- 1 teaspoon salt
- 1 egg
- 6 slices white bread, thinly sliced
- oil (for frying)
- 2 tablespoons cornstarch
- 1 egg white
- 1/2 teaspoon sugar
Method
- Mince the shrimp.
- Combine the minced shrimp with the chopped water chestnuts, salt, sugar, 1 Tbls. cornstarch and the whole egg.
- In a separate bowl, beat the egg white and mix in the remaining 1 Tbls. cornstarch.
- Cut the crusts from the bread slices and slice each piece into four triangles.
- Coat one side of each bread triangle with the egg white mixture, then spread the shrimp paste over the top.
- Heat oil to 375degree F in a suitable pan for frying.
- Place the toast pieces shrimp-side down into the hot oil and fry until they turn a golden colour.
- Gently turn each piece over to fry and brown the bread side.
- Remove the cooked toasts from the oil and drain them on kitchen paper.
- Serve the shrimp toast immediately while still hot.
