Tahitian Sweet Potatoes With Fei Bananas
This dish offers a creamy and lightly spiced combination of sweet potatoes and firm bananas, known as fei. It is simmered in a coconut milk sauce flavoured with red curry paste, lime, fish sauce, and brown sugar. The result is a savoury and slightly sweet curry where the bananas soften but hold their shape. It makes a wonderful accompaniment to grilled meats. Ingredients
- 3 large sweet potatoes, peeled and diced
- 2 tablespoons cooking oil
- 1 (13 1/2 ounce) can light coconut milk
- 1 -2 tablespoon red curry paste
- 1 lime
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 3 firm bananas (they can be slightly green)
- 3 -4 Thai red chili peppers, sliced
- 2 tablespoons chopped cilantro
Method
- Warm the oil in a large saucepan.
- Cook the diced potatoes until they develop a light golden colour on the edges.
- Pour in the coconut milk, then add the curry paste, lime juice, fish sauce, and brown sugar, stirring everything to combine.
- Place a lid on the pan and let it simmer for 15 minutes, stirring now and then, until the potato pieces are tender.
- Peel the bananas, cut them into chunks, and fold them into the potato mixture.
- Continue to cook for 5-7 minutes until everything is hot and the banana pieces have softened slightly without breaking down.
- Scatter the chopped cilantro and sliced chilli peppers over the top as a garnish.
- Present the dish while it is still hot.
