Tahitian Sweet Potatoes With Fei Bananas

Ingredients

  • 3 large sweet potatoes, peeled and diced
  • 2 tablespoons cooking oil
  • 1 (13 1/2 ounce) can light coconut milk
  • 1 -2 tablespoon red curry paste
  • 1 lime
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 3 firm bananas (they can be slightly green)
  • 3 -4 Thai red chili peppers, sliced
  • 2 tablespoons chopped cilantro

Method

  1. Warm the oil in a large saucepan.
  2. Cook the diced potatoes until they develop a light golden colour on the edges.
  3. Pour in the coconut milk, then add the curry paste, lime juice, fish sauce, and brown sugar, stirring everything to combine.
  4. Place a lid on the pan and let it simmer for 15 minutes, stirring now and then, until the potato pieces are tender.
  5. Peel the bananas, cut them into chunks, and fold them into the potato mixture.
  6. Continue to cook for 5-7 minutes until everything is hot and the banana pieces have softened slightly without breaking down.
  7. Scatter the chopped cilantro and sliced chilli peppers over the top as a garnish.
  8. Present the dish while it is still hot.
