Tagliatelle with Grilled Chicken and Tomatoes

This British pasta dish combines grilled chicken breasts marinated with lemon and tarragon alongside roasted tomatoes. The tagliatelle is tossed with the pan juices and a little pasta water to create a simple, light sauce. It's a quick, low-fat dinner option that provides a portion of your daily fruit and vegetable intake, ready in under half an hour.

Tagliatelle with Grilled Chicken and Tomatoes

Ingredients

  • 500g skinless chicken breasts
  • zest and juice 1 lemon
  • 1 tbsp chopped tarragon or 1 tsp dried
  • 2 tsp olive oil
  • 8 small tomatoes halved
  • 300g tagliatelle

Method

  1. Set your grill to high. Combine the lemon zest, juice, tarragon, salt and pepper and coat the chicken breasts in this mixture. Place them in a single layer in a large, shallow ovenproof dish or roasting tin. Brush the chicken lightly with a little oil and grill for 6 mins.
  2. Turn the chicken over. Add the halved tomatoes to the dish, placing them cut-side up, and brush them lightly with oil. Grill for a further 6-8 mins until the chicken is fully cooked and lightly browned and the tomatoes have softened.
  3. While the chicken grills, cook the tagliatelle in a large pan of boiling water as directed on the packet. Drain the pasta, keeping 150ml of the cooking water, then return the pasta to the pan.
  4. Take the cooked chicken from the dish and cut it into chunks. Add the chicken pieces, the grilled tomatoes, the reserved pasta water and all the pan juices to the pasta in the pan. Toss everything together thoroughly before serving.
