This well-loved Middle-Eastern dish is a classic tabbouleh salad, perfect for serving alongside fish. It combines fluffy couscous with fresh vine-ripened tomatoes, cucumber, spring onions and plenty of parsley. A zesty dressing of olive oil, lemon juice and garlic brings it all together. Ready in just 20 minutes, it makes a vibrant side dish for lunch or dinner.

Tabbouleh Salad

Ingredients

  • 250g couscous
  • 4 vine-ripened tomatoes
  • half a cucumber
  • 1 bunch spring onions sliced
  • 2 x 20g packs fresh parsley
  • grated zest of a lemon
  • 6 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 crushed garlic clove

Method

  1. Place the couscous into a large bowl. Pour boiling water or stock over it and give it a stir. Cover the bowl with a plate or cling film and allow it to stand for 5 mins until the liquid is fully absorbed. Use a fork to fluff up and separate the grains.
  2. Dice the vine-ripened tomatoes and the cucumber finely. Slice the spring onions and chop the parsley finely, then combine all these with the couscous along with the grated lemon zest.
  3. Whisk together the olive oil, lemon juice and the crushed garlic clove, seasoning it well. Drizzle this dressing over the couscous mixture. Toss everything thoroughly and serve alongside grilled fish, meat or chicken.
