This recipe creates a savoury, spiced butter infused with the unique flavour of Szechuan peppercorns, a touch of chilli heat and the umami depth of soy sauce. It is a versatile Chinese condiment that can be prepared in only 5 minutes. Once made, it will keep for one week when chilled. It is perfect for serving with Asian-style greens or for melting over a cooked steak to add a rich, complex flavour.

Szechuan Pepper, Chilli & Soy Butter

Ingredients

  • 75g softened unsalted butter
  • 1/2 tsp Szechuan peppercorns
  • pinch chilli flakes
  • 1 tbsp light soy sauce

Method

  1. 1. Use an electric whisk or a small blender to beat the softened butter until it becomes pale and fluffy. 2. Finely grind the 1/2 tsp of Szechuan peppercorns using a pestle and mortar. 3. Mix the ground pepper and the pinch of chilli flakes into the whipped butter. 4. Whip the 1 tbsp of light soy sauce into the butter mixture until everything is fully combined. 5. Spoon the finished butter into a dish, or shape it using waxed wrap or parchment paper, then chill it until you are ready to use it. It will keep for one week. 6. Serve it with Asian greens or melt it onto steak.
