Swiss Cheese Schnitzel
This Scandinavian main course offers a delicious twist on pork steaks. The meat is dipped in beaten egg before being pressed into a seasoned mixture of fine breadcrumbs and Gruyère or Emmental cheese. The coated schnitzels are then pan-fried in olive oil until perfectly cooked. This supper dish, serving four, is excellent when paired with a fresh, crisp salad for a complete meal.
Ingredients
- 4 slices white bread (about 100g/4oz)
- 50g gruyère or emmental cheese
- 4 x 175g/6oz pork steak trimmed of fat
- 1 egg beaten
- 2 tbsp olive oil
Method
- Process the bread slices in a food processor to create fine crumbs. Combine the breadcrumbs with the grated cheese on a large plate and season. Coat each pork steak first in the beaten egg, then firmly press into the crumb mixture to cover completely.
- Warm the olive oil in a large non-stick frying pan. Cook the coated steaks for 3-4 mins on each side until they are thoroughly cooked. Accompany with a crisp salad or the Swiss-style salad suggestion.
