Sweet Sticky Rice and Mango

Ingredients

  • 8 cups water, divided
  • 1 cup sweet rice
  • 1 (15 ounce) can coconut milk
  • 0.5 cup white sugar
  • 0.75 teaspoon salt
  • 1 ripe mango, peeled and sliced

Method

  1. Soak the sweet rice in 6 cups of water within a large bowl for 8 hours or overnight.
  2. Drain and rinse the rice. Place it in a saucepan with 2 cups of water and bring to a boil. Cover, reduce the heat, and simmer for 15 to 20 minutes until the rice is tender and the liquid is absorbed. Move the cooked rice to a bowl.
