Sweet Potato Casserole
This cherished family recipe yields a comforting sweet potato casserole, a staple for holiday meals. Boiled sweet potatoes are mashed and combined with butter, sugar, eggs, orange juice concentrate, and warm spices. The mixture is baked in a dish and finished with a topping of miniature marshmallows that become lightly toasted in the oven. It serves a crowd and is always a popular side dish.
Ingredients
- 6 sweet potatoes
- 1/2 cup butter
- 1/2 cup sugar
- 2 eggs
- 2 -3 tablespoons frozen orange juice concentrate
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- 1 -1 1/4 cup miniature marshmallow
Method
- Set your oven to heat to 350 degrees.
- Lightly grease a two-quart baking dish.
- Quarter the sweet potatoes and put them in a large pot of water. Cover the pot and bring the water to a boil. Lower the heat and let the potatoes simmer for 30 minutes or until they are tender. Drain the water away, then mash or whip the potatoes.
- Beat the butter, sugar, and eggs into the mashed sweet potatoes until blended, remembering to scrape the bowl sides now and then.
- Stir in the orange juice concentrate, salt, cinnamon, nutmeg, and ground ginger until everything is well combined.
- Transfer the mixture into the prepared dish. Scatter the miniature marshmallows evenly over the top. Place in the oven and bake for 30 minutes.
