Sweet Popcorn
Create a delicious batch of sweet caramel popcorn for a cosy film evening. This recipe transforms popcorn kernels and sugar into a crisp, golden treat. The method involves popping the corn in a pan before coating it in a homemade caramel sauce. It yields enough for six people to share and takes just 17 minutes from start to finish. It's an ideal snack to break apart and enjoy while watching your favourite show.
Ingredients
- 2 tbsp vegetable oil
- 100g popcorn kernels
- 250g caster sugar
- 50g salted butter cubed
Method
- Heat 2 tbsp vegetable oil in a large saucepan with a lid. Add 100g popcorn kernels and coat them in the oil. Cover the pan and heat until the first kernel pops, then reduce the heat. Once frequent popping is heard, shake the pan. Continue shaking regularly until the popping sound ceases, then remove from the heat.
- Prepare a large baking tray with baking parchment. In a separate heavy-based pan, combine 250g caster sugar with 60ml water and bring to a boil. Stir to dissolve the sugar, then let it cook without stirring for 6-8 mins until it turns a golden caramel colour. Swirl the pan, add 50g cubed salted butter carefully, and stir until fully incorporated.
- Immediately pour the hot caramel over the popcorn in its pan and stir quickly to coat all pieces, avoiding contact with the caramel. Transfer the mixture to the lined baking tray. Use a spoon to press it into an even layer. Allow it to cool for 5 mins, then break into pieces to serve.
