Sweet Onion Jelly

Ingredients

  • 3 cups chopped onions (Vidalia, Walla Walla or your favorite sweet variety)
  • 3/4 cup cider vinegar
  • 2 1/2-3 cups sugar
  • 1 teaspoon crushed red pepper flakes
  • 1 (1 5/8 ounce) package powdered fruit pectin (Ball Fruit Jell No Sugar Needed variety)

Method

  1. Blend the chopped onions and cider vinegar in a blender until you achieve a smooth purée.
  2. Transfer the onion and vinegar mixture into a suitable saucepan.
  3. Mix in the sugar and crushed red pepper flakes, then place the pan over heat until the contents reach a boil.
  4. Allow the mixture to boil for five (5) minutes, then incorporate the powdered fruit pectin, stirring well.
  5. Return the mixture to a vigorous, rolling boil and maintain it for one (1) minute.
  6. Carefully pour the hot jelly into prepared sterilised jars, fasten the lids, and process the jars in a boiling water bath for ten (10) minutes.
