Sweet Onion Jelly
This sweet onion jelly is a wonderfully adaptable condiment. It combines puréed sweet onions with cider vinegar, sugar, and a touch of red pepper for a gentle kick. The mixture is boiled with pectin to set, then jarred. It pairs excellently with cream cheese on crackers or bagels, and works as a glaze or topping for various meats and sandwiches. The recipe yields about 3 1/2 cups and can be stored in the refrigerator.
Ingredients
- 3 cups chopped onions (Vidalia, Walla Walla or your favorite sweet variety)
- 3/4 cup cider vinegar
- 2 1/2-3 cups sugar
- 1 teaspoon crushed red pepper flakes
- 1 (1 5/8 ounce) package powdered fruit pectin (Ball Fruit Jell No Sugar Needed variety)
Method
- Blend the chopped onions and cider vinegar in a blender until you achieve a smooth purée.
- Transfer the onion and vinegar mixture into a suitable saucepan.
- Mix in the sugar and crushed red pepper flakes, then place the pan over heat until the contents reach a boil.
- Allow the mixture to boil for five (5) minutes, then incorporate the powdered fruit pectin, stirring well.
- Return the mixture to a vigorous, rolling boil and maintain it for one (1) minute.
- Carefully pour the hot jelly into prepared sterilised jars, fasten the lids, and process the jars in a boiling water bath for ten (10) minutes.
