Sweet Noodle Kugel with Raisins

Ingredients

  • 1 (12 ounce) package yolk-free egg noodles
  • 0.5 cup sweet butter, cut into pieces
  • 1 (16 ounce) container creamed cottage cheese
  • 1 pint sour cream
  • 0.5 cup white sugar
  • 0.5 cup raisins
  • 2 large eggs, slightly beaten
  • 2 tablespoons vanilla extract
  • 0.25 cup brown sugar
  • 0.25 cup crushed cornflakes

Method

  1. Set your oven to 450 degrees F (230 degrees C). Lightly grease a 9x13-inch baking dish.
  2. Bring a large pot of lightly salted water to a rolling boil. Add the egg noodles and cook for 10 to 12 minutes, until they are tender but still have a bite. Drain the noodles and place them back into the pot.
  3. Add the pieces of butter to the hot noodles and mix until melted. Stir in the cottage cheese, sour cream, white sugar, raisins, slightly beaten eggs, and vanilla extract. Pour this mixture into your prepared baking dish. Combine the brown sugar with the crushed cornflakes and sprinkle this topping evenly over the kugel.
  4. Place the dish in the preheated oven and bake for 30 minutes.
