This quick recipe for sweet chilli chicken uses a simple glaze of chilli sauce, honey and oil. Chicken breasts are slashed, seasoned and stuffed with garlic before being coated in the glaze and grilled until golden and sticky. The dish is finished with fresh lime wedges for a zesty touch. It's ready in just 20 minutes, making it an ideal choice for a speedy yet impressive dinner.

Sweet Chilli Chicken

Ingredients

  • 3 -4 tablespoons chili sauce
  • 2 tablespoons clear honey
  • 2 tablespoons olive oil
  • 4 boneless chicken breasts, skin on
  • 2 cloves garlic, crushed
  • 1 lime, cut into 4 wedges

Method

  1. Combine the chilli sauce, honey and oil in a bowl to create the glaze.
  2. Take a sharp knife and score 3-4 cuts into the skin side of each chicken breast.
  3. Season the chicken with salt and pepper, then lift the skin and place the crushed garlic underneath.
  4. Coat the underside of each breast thoroughly in the prepared glaze.
  5. Set aside the remaining glaze for use later.
  6. Place the chicken, glazed side facing up, under a pre-heated grill and cook for 8 minutes until it becomes golden and sticky.
  7. Flip the chicken breasts over, brush them with the reserved glaze and grill for a further 6-8 minutes.
  8. Serve straight away, accompanied by the lime wedges.
