Sweet Chilli Burgers
Elevate the classic burger with a sweet chilli twist. Juicy minced beef patties are flavoured with fresh chilli and coriander, then pan-fried to your liking. They're served on toasted English muffins with a side of roasted cherry tomatoes on the vine and a vibrant relish made from red onion, parsley, lime juice and sweet chilli sauce. This recipe brings a fresh, flavourful update to your lunch or dinner table in only 20 minutes.
Ingredients
- 500g minced beef
- 1 red chilli deseeded and finely chopped
- 2 tbsp chopped coriander plus small handful leaves, to serve
- 300g pack cherry tomatoes on the vine
- 4 tbsp olive oil
- juice 1 lime
- 2 tbsp sweet chilli
- small handful flat-leaf parsley leaves
- 1 small red onion cut into wafer-thin slices
- 2 English muffins toasted
Method
- Set your oven to 200C/fan 180C/ gas 6. Combine the minced beef with the chopped red chilli and 2 tbsp of chopped coriander, seasoning generously. Form the mixture into four patties, each roughly 2.5cm thick, and refrigerate.
- Place the vine of cherry tomatoes into a roasting tin. Drizzle them with 1 tbsp of olive oil, season, and roast for 12-15 mins until they have softened.
- Warm 1 tbsp of oil in a non-stick frying pan. Cook the burgers for 4 mins per side for rare, or 5 mins for medium. For the relish, whisk together 2 tbsp of olive oil, the lime juice, 2 tbsp sweet chilli, the parsley, coriander leaves and sliced red onion. To assemble, place each burger on a toasted muffin half, add a branch of the roasted tomatoes and spoon over the red onion relish.
