Summery Greens and Goat's Cheese Crostini
These delightful French canapés are perfect for a wedding or special event. A smooth, herby paste made from broad beans or peas is spread onto golden, grilled baguette slices. Each crostini is finished with crumbled goat's cheese and a fresh scattering of mint, creating a vibrant and tasty bite-sized treat. The components can be prepared ahead of time for easy assembly.
Ingredients
- 250g frozen broad beans or peas, defrosted
- 1 garlic clove roughly chopped
- 3 tbsp extra-virgin olive oil
- 100g pack crumbly goat's cheese
- handful mint leaves, chopped
- 4 thin baguettes
- splash of olive oil
Method
- Should you use broad beans, remove each bean from its pale outer shell. Place the shelled beans or the defrosted peas into a small food processor with the chopped garlic and a good pinch of seasoning. Add the 3 tbsp of extra-virgin olive oil and blend until you achieve a smooth mixture. This paste can be chilled for up to 2 days. To serve, mix in a little water to make it easy to spread, then apply some to each crostini base. Sprinkle a small amount of crumbled goat's cheese on top, followed by the chopped mint leaves.
- To prepare the crostini, slice each of the 4 thin baguettes into 20 pieces, each about ½cm thick, and do not use the ends. Lightly coat the slices with a splash of olive oil. Grill them for 2-3 mins until they start to colour, then flip them over and grill for another 1-2 mins until they are crisp and golden all over. Work in batches if needed. The toasted slices will keep in an airtight container at room temperature for up to 3 days.
