Sugar-cured strawberries and white chocolate crumble
Transform fresh strawberries into an elegant dessert. The fruit is quartered and cured with sugar, then served with a golden baked crumble made from milk powder, cornflour and melted white chocolate. Each bowl is finished with crème fraîche, chopped pistachios and optional mint leaves for a vibrant finish. This recipe serves four and takes just 20 minutes of active preparation, plus baking and curing time.
Ingredients
- 60g milk powder
- 50g cornflour
- 20g light brown soft sugar
- 50g butter melted
- 100g white chocolate melted
- 400g strawberries
- 4 tbsp crème fraîche
- 20g pistachios chopped
- mint leaves (optional), to serve
Method
- Set your oven to 160C/140C fan/gas 3. Combine the milk powder, cornflour and half the sugar in a bowl. Pour in the melted butter and white chocolate, then stir with a spoon to create a crumbly mixture. Spread this over a baking sheet and bake for 10 mins until it turns golden. Take it out and allow it to cool completely.
- Take the tops off the strawberries and cut each one into quarters. Place the strawberry pieces in a bowl with the remaining sugar and toss to coat. Share the sugared strawberries equally among four serving bowls and let them cure for 30 mins.
- Top each bowl of strawberries with a generous spoonful of crème fraîche. Sprinkle over the chopped pistachios and a portion of the cooled crumble. You will have extra crumble, which can be stored in a jar or airtight container for several weeks. For added colour and flavour, finish with a few small mint leaves if desired.
