Strawberry Lemon Sorbet
This refreshing sorbet combines the sweetness of strawberries with the bright, intense flavour of fresh lemon. The method involves blending whole lemons with sugar to create a fragrant base, which is then mixed with a strawberry purée. The mixture is churned in an ice cream machine until perfectly frozen, resulting in a smooth and vibrant dessert ideal for warm days. It yields 8-10 servings and requires just over five hours to prepare and freeze.
Ingredients
- 2 lemons, roughly chopped (the lot, skin, pith etc.)
- 2 lbs superfine sugar
- 4 lbs strawberries, hulled
- 4 tablespoons lemon juice
Method
- Place the chopped lemons and superfine sugar into a food processor or blender. Pulse the mixture until it forms a smooth purée, then transfer this to a bowl.
- Purée the hulled strawberries and combine them with the lemon mixture. Stir in roughly half of the lemon juice, taste, and add more if needed to achieve a strong lemon flavour that doesn't dominate the strawberries.
- Transfer the combined mixture into an ice cream machine and churn it until frozen. If your machine is small, you may need to churn the sorbet in separate batches. Alternatively, freeze it in a suitable container.
