Strawberry and Balsamic Homemade Gelato
This Italian dessert gelato combines fresh strawberries with a touch of balsamic vinegar for a sophisticated flavour. The strawberries are first roasted in the oven to concentrate their juices before being blended with cream and sugar. The mixture is then churned in an ice cream maker until it reaches a perfect, creamy consistency. The result is a rich and fruity homemade treat that serves four people.
Ingredients
- 3.5 cups fresh strawberries, hulled
- 0.5 cup white sugar, divided
- 1 teaspoon balsamic vinegar
- 0.5 cup heavy whipping cream
Method
- Set your oven to 350 degrees F (175 degrees C). Use a silicone baking mat to line a sheet, ensuring it is larger than the tray to catch any escaping juices.
- Place the hulled strawberries in a bowl with 1/4 cup sugar and the balsamic vinegar, tossing them gently to coat. Move everything to the prepared baking sheet, using a spatula to scrape all the liquid from the bowl.
- Roast the strawberries in the oven for 30 minutes. Take them out and allow them to cool completely, which should take about 30 minutes.
- Put the cooled strawberries and all their collected juice into a food processor. Add the remaining 1/4 cup sugar and the heavy cream, then process the mixture until it is completely smooth.
- Transfer the blended strawberry mixture into your ice cream maker. Churn it following the machine's directions until it has a creamy gelato texture, which will take 40 to 45 minutes. It is best enjoyed straight away.
