Stollen Sour
This sweet and spiced German cocktail is an ideal festive drink. It combines amaretto, madeira and fresh lemon juice with a homemade syrup infused with cinnamon, mixed spice and citrus zest. The drink is shaken and strained over crushed ice, then garnished with a skewer of dried fruits soaked in orange liqueur. Perfect for serving at a Christmas gathering, it makes four portions and takes about 20 minutes to prepare, including time for the syrup to chill.
Ingredients
- 8 sultanas
- 1 dried apricot quartered
- 4 cocktail cherries
- 4 dried cranberries
- 1 tsp orange liqueur
- 150ml amaretto
- 100ml freshly squeezed lemon juice (about 2 lemons)
- 75ml madeira
- crushed ice
- 100g golden caster sugar
- thick strip pared orange zest
- thick strip pared lemon zest
- 1 tsp cinnamon
- 1 tsp mixed spice
- good grating of nutmeg
- 4 cocktail sticks
Method
- Begin by preparing the spiced syrup. Combine all the syrup ingredients in a saucepan with 100ml water. Warm the mixture until it reaches a boil, then remove from the heat and let it cool completely. Pass the cooled syrup through a fine sieve into a jug and refrigerate. This syrup can be prepared up to 1 week in advance.
- As the syrup chills, place the sultanas, apricot pieces, cherries and cranberries into a small bowl. Pour the orange liqueur over the fruits and allow them to macerate for approximately 30 mins, though they can steep for up to 24 hrs.
- To assemble the drinks, take 4 cocktail sticks and spear 2 sultanas, one apricot quarter, a cherry and a cranberry onto each stick. Prepare four tumblers by filling them with crushed ice.
- Combine the amaretto, lemon juice, madeira and 50ml of the chilled spiced syrup in a cocktail shaker, adding any remaining orange liqueur from the fruit bowl. Add a handful of ice to the shaker and shake vigorously until the exterior feels very cold. Strain the mixture into the prepared glasses. Finish each drink with a dried fruit skewer and serve straight away.
