Stir-fried Rice with Cabbage & Bacon
This Chinese-inspired rice dish is a speedy and flavourful side, ideal to accompany roast chicken or duck. It combines crispy bacon lardons with shredded Savoy cabbage, spring onions, basmati rice and petits pois, all stir-fried together in one pan. The whole dish comes together in just 15 minutes, making it a convenient and tasty addition to any dinner.
Ingredients
- 1 tbsp sunflower oil
- 100g unsmoked lardon (diced bacon)
- 200g/8oz Savoy cabbage shredded
- bunch trimmed spring onion sliced at an angle
- 2 x 250g packs cooked basmati rice
- 200g frozen petits pois
Method
- 1. Heat the sunflower oil in a large frying pan or wok. Add the bacon lardons and fry them for a minute. 2. Tip the shredded cabbage and sliced spring onions into the pan, stir them around, then pour in 2 tbsp of water along with any reserved duck marinade. 3. Place the cooked basmati rice and frozen peas on top of the cabbage mixture. Cover the pan and cook for 5 minutes. 4. Remove the lid from the pan, toss all the ingredients together thoroughly, then serve immediately.
