Stir-fried Korean Beef
This fast Korean main course combines thinly sliced beef with fresh beansprouts and baby spinach. The dish is seasoned with a simple sauce of soy and mirin, then finished with toasted sesame seeds. It's a flavourful stir-fry that cooks in one pan and is ready to eat in 20 minutes, perfect for a speedy weeknight dinner. Serve it with rice for a complete meal.
Ingredients
- 1 tbsp soy sauce
- 1 tbsp mirin or clear honey
- 2 tsp cornflour mixed to a paste with 2 tbsp water
- 1 tbsp vegetable oil
- 300g beef frying steak, thinly sliced
- 1 garlic clove thinly sliced
- 1 red chilli finely chopped
- 3 spring onions sliced into small pieces
- 300g pack beansprout
- 100g bag baby spinach
- handful sesame seeds toasted
- cooked rice to serve (optional)
Method
- Combine the soy sauce, mirin or honey, and the cornflour paste in a small bowl. Warm the oil in a wok or large frying pan. Season the beef slices and cook them in batches until seared, then transfer to a plate and cover with foil. Cook the garlic and chilli next, then introduce the spring onions and beansprouts, stir-frying them for 2 mins.
- Place the beef back into the pan and add the spinach and the prepared sauce. Continue to stir-fry for another 2-3 mins until the spinach has fully wilted. Finish by scattering over the toasted sesame seeds and serve with rice if desired.
