This Asian-inspired stir-fry is a speedy and nutritious choice for lunch or dinner. Thinly sliced sirloin steak is marinated in a blend of soy sauce, sherry, and aromatics, then quickly cooked with carrot matchsticks, mangetout, and mushrooms. The dish is finished with a glossy hoisin sauce and a sprinkle of toasted sesame seeds, creating a flavourful meal that is ready to enjoy in just 25 minutes. Serve it over Chinese noodles for a complete dish.

Stir-fried beef with hoisin sauce

Ingredients

  • 1 tbsp soy sauce
  • 1 tbsp dry sherry
  • 2 tsp sesame oil
  • 1 fat garlic clove crushed
  • 1 tsp finely chopped fresh root ginger (or fresh ginger paste in a jar)
  • 200g lean sirloin steak thinly sliced across the grain
  • 1 tbsp sesame seeds
  • 1 tbsp sunflower oil
  • 1 large carrot cut into matchsticks
  • 100g mangetout halved lengthways
  • 140g mushrooms sliced
  • 3 tbsp hoisin sauce
  • Chinese noodles to serve

Method

  1. Combine the soy sauce, sherry, sesame oil, garlic and ginger in a shallow dish. Place the steak slices in the mixture and allow them to marinate for about 20 minutes, or longer if possible.
  2. Place a large, heavy-based frying pan or wok over the heat. Add the sesame seeds and toast them, stirring constantly, for a few minutes until they turn golden. Transfer them to a plate.
  3. Heat the sunflower oil in a large frying pan or wok until it is hot. Add the steak along with its marinade and stir fry for 3-4 minutes until the meat is lightly browned. Remove the beef with a slotted spoon to a plate, leaving the cooking juices behind.
  4. Add the carrot matchsticks to the pan and stir fry them for a few minutes. Next, incorporate the mangetout and continue cooking for a further 2 minutes.
  5. Place the steak back into the pan and add the sliced mushrooms, tossing everything together. Pour in the hoisin sauce and stir fry for a final minute. Scatter the toasted sesame seeds over the top and serve straight away.
