This British supper dish offers a luxurious way to prepare steak. Sirloin steaks are pan-fried and then served with a glossy, deeply flavoured sauce made by reducing red wine with shallots, fresh thyme, redcurrant jelly and grainy mustard. The recipe is quick to prepare, taking just 25 minutes from start to finish, and can easily be scaled down for a smaller meal.

Steaks in Red Wine Sauce

Ingredients

  • 4 x 175-200g/6-8oz sirloin steaks
  • 2 chopped shallots
  • 25g butter
  • 300ml red wine
  • 2-3 sprigs fresh thyme
  • 2 tbsp redcurrant jelly
  • 2 tsp grainy mustard

Method

  1. Season the steaks with black pepper. Place a large non-stick frying pan over heat until very hot, then cook the steaks for 2-3 minutes without moving them. Add salt, flip the steaks and cook for a further 2-3 minutes. set aside to keep warm.
  2. Reduce the heat and cook the chopped shallots in the butter until soft, for about 2 minutes. Add the red wine and thyme, then let the liquid reduce by two-thirds. Mix in the redcurrant jelly, mustard, and salt and pepper to taste. Place the steaks back into the pan to warm through in the sauce before serving.
