This Latin American main course features juicy grilled steaks paired with a piquant homemade chimichurri. The vibrant green sauce is made by blending parsley, oregano, garlic, shallot and chilli flakes with olive oil, lemon juice and red wine vinegar. The seasoned steaks are cooked for 2-3 minutes on each side to your preference, then rested and topped with the sauce. It serves two and is perfect with a side of fries and salad for a complete dinner.

Steak with Chimichurri Sauce

Ingredients

  • small bunch parsley roughly chopped
  • 1/2 tsp oregano fresh or dried
  • 2 garlic cloves
  • 1 shallot chopped
  • 1/2 tsp chilli flakes
  • 2 1/2 tbsp olive oil
  • juice 1/2 lemon
  • 2 tsp red wine vinegar
  • 2 x 125g rib-eye or sirloin steaks
  • fries and salad to serve

Method

  1. Prepare the chimichurri by processing the parsley, oregano, garlic, shallot and chilli flakes in a food processor or mincing them finely by hand. Incorporate 2 tbsp of the olive oil along with the lemon juice, vinegar and some seasoning, then pulse until a saucy texture forms.
  2. Massage the remaining oil and a little seasoning into the steaks. Place a griddle or frying pan on the heat and cook the steaks for 2-3 mins on each side until they reach your desired doneness. Allow them to rest for a few mins, then drizzle with the sauce and accompany with fries and salad.
