Steak & Aubergine Salad

Ingredients

  • 1 aubergine halved lengthways, cut into thin slices
  • 2 tbsp flour
  • 3 1/2 tbsp olive oil
  • 1 sirloin steak
  • 100g lamb’s lettuce
  • 50g feta cut into cubes
  • 1 green chilli halved and chopped
  • 1/2 lemon juiced
  • 1/2small pack coriander plus extra leaves to serve
  • 1/2small pack mint plus extra leaves to serve

Method

  1. Coat the aubergine slices in the seasoned flour. Warm 2 tbsp of the olive oil in a large frying pan. Fry the aubergine for a few mins on each side until soft and tender, then remove from the pan. Increase the heat, season the steak, and cook it for 2 mins on each side for a rare result. Let it rest for 5 mins before slicing.
  2. Combine the rest of the olive oil with the other dressing ingredients and a splash of water in a blender. Process until smooth. To assemble, toss half the dressing with the lamb's lettuce and place on a plate. Arrange the cooked aubergine and sliced steak on top. Crumble the feta over the salad and drizzle with the rest of the dressing. Finish with a scattering of the extra herbs.
