Steak & Aubergine Salad
Prepare this satisfying salad in only 25 minutes. It combines seared sirloin steak with slices of fried aubergine, crumbled feta and fresh lamb's lettuce. A vibrant dressing made with green chilli, lemon and herbs brings everything together. This dish is a flavourful and substantial option for a summer lunch or a speedy supper.
Ingredients
- 1 aubergine halved lengthways, cut into thin slices
- 2 tbsp flour
- 3 1/2 tbsp olive oil
- 1 sirloin steak
- 100g lamb’s lettuce
- 50g feta cut into cubes
- 1 green chilli halved and chopped
- 1/2 lemon juiced
- 1/2small pack coriander plus extra leaves to serve
- 1/2small pack mint plus extra leaves to serve
Method
- Coat the aubergine slices in the seasoned flour. Warm 2 tbsp of the olive oil in a large frying pan. Fry the aubergine for a few mins on each side until soft and tender, then remove from the pan. Increase the heat, season the steak, and cook it for 2 mins on each side for a rare result. Let it rest for 5 mins before slicing.
- Combine the rest of the olive oil with the other dressing ingredients and a splash of water in a blender. Process until smooth. To assemble, toss half the dressing with the lamb's lettuce and place on a plate. Arrange the cooked aubergine and sliced steak on top. Crumble the feta over the salad and drizzle with the rest of the dressing. Finish with a scattering of the extra herbs.
