This is the definitive bean recipe for anyone who enjoys them, offering a far simpler alternative to preparing baked beans from the beginning. A cherished recipe shared by a friend over a decade ago, it has become a staple that consistently earns praise. The beans also store very well in the freezer. It yields enough for a gathering, taking about 110 minutes from start to finish.
Ingredients
- 1/4 cup onion
- 3 slices bacon, diced
- 48 ounces canned beans (Heinz, etc.)
- 1/2 cup pineapple chunks or 1/2 cup pineapple tidbits
- 4 tablespoons brown sugar
- 2 teaspoons instant coffee
- 2 tablespoons molasses
- 1/2 cup canned diced tomato
Method
- Cook the diced bacon and onion together, then combine this mixture with the beans.
- Mix in all the other listed ingredients and place in the oven, covered, at 325 for 1 hour.
