Spinach and Ham Scrambled Eggs

Ingredients

  • half an English muffin
  • handful baby spinach leaves
  • scrambled eggs (see recipe link below)
  • a slice of ham off the bone, or prosciutto
  • tomato chutney, to serve

Method

  1. 1. Halve an English muffin, toast it, and spread with butter. 2. Just before the scrambled eggs are done, fold in a handful of baby spinach leaves until they have slightly wilted. 3. Place a slice of ham or prosciutto on one half of the toasted muffin. 4. Spoon the scrambled egg and spinach mixture over the ham. 5. Serve with the other muffin half and a spoonful of tomato chutney alongside.
