Spicy Tex-Mex Pizza
This Tex-Mex pizza offers a south-of-the-border twist on a classic. A pre-baked crust is spread with a mixture of spicy refried beans and salsa, then baked until crisp. It's finished with fresh lettuce, green onions, more salsa, a drizzle of ranch dressing, crumbled tortilla chips, and shredded pepper Jack cheese for a melty topping. The whole dish comes together in just 30 minutes, serving four people a fun and flavourful dinner.
Ingredients
- 0.5 (16 ounce) can spicy fat-free refried beans*
- 1 cup salsa, divided
- 1 (12 inch) pre-baked Italian pizza crust
- 2 cups shredded hearts of romaine lettuce
- 3 medium green onions, thinly sliced
- 0.25 cup ranch dressing
- 0.25 cup crumbled tortilla chips
- 1 cup shredded pepper Jack or Monterey Jack cheese
Method
- Move the oven rack to its lowest setting and preheat the oven to 450 degrees. Combine the refried beans with 1/2 cup of the salsa in a bowl. Put the pizza crust on a cookie sheet and spread the bean mixture evenly over it. Bake for about 10 minutes until the crust is warm and crisp.
- Take the pizza out of the oven. Layer the shredded lettuce and sliced green onions on top, then add spoonfuls of the remaining salsa. Drizzle the ranch dressing over everything. Scatter the crumbled tortilla chips and shredded cheese over the pizza. Bake it again for about 2 minutes more, just until the cheese has melted. Slice into six pieces and serve immediately.
