Spicy Stir-Fried Sprouts
Transform Brussels sprouts with this vibrant Chinese stir-fry. Halved sprouts are briefly boiled before being tossed in a hot wok with sliced chilli, chopped garlic and fresh ginger matchsticks. Finished with a drizzle of soy sauce, this spicy side dish offers a fantastic alternative to plain boiled sprouts and pairs wonderfully with roast pork or turkey. It serves four and takes just 30 minutes to prepare.
Ingredients
- 500g brussels sprout trimmed and halved
- 1 tbsp sunflower oil
- 1 chilli sliced into rings
- 2 garlic cloves finely chopped
- large piece of fresh root ginger cut into fine matchsticks
- 1 tbsp soy sauce
Method
- 1. Boil the halved sprouts in salted water for 3 mins before draining thoroughly. 2. Warm the sunflower oil in your wok, then quickly stir-fry the sliced chilli, chopped garlic and ginger matchsticks for 1 min. 3. Introduce the drained sprouts to the wok and continue cooking for 2 mins. 4. Finish by drizzling over the soy sauce and giving the entire mixture one last toss to combine before serving.
