Spicy Shrimp With Hot Chili Peppers
This vibrant Asian dish combines succulent shrimp with the intense heat of fresh chillies. The prawns are first marinated in a blend of soy, sherry, and aromatics, then quickly stir-fried. Ingredients
- 2 tablespoons cornstarch
- 2 tablespoons dry sherry or 2 tablespoons rice wine
- 1 tablespoon soy sauce
- 1 tablespoon minced fresh garlic, to taste (lots is better!)
- 1 tablespoon fresh minced ginger
- 1 teaspoon sesame oil
- 1 1/2-2 lbs uncooked medium shrimp, peeled and deveined
- 3/4 cup chicken broth
- 3 tablespoons sugar, to taste
- 1 1/2 tablespoons cornstarch
- 1/4 cup soy sauce
- 3 tablespoons dry sherry or 3 tablespoons rice wine
- 2 teaspoons rice vinegar
- 6 small chili peppers or 1 teaspoon crushed dry red pepper flakes, to taste
- 4 tablespoons oil, divided
- 1 tablespoon minced fresh garlic, to taste
- 1 1/2 cups green onions, cut in 1/2 inch pieces
- 1 red bell pepper, seeded and cored, cut into 1/2 inch squares
- 1 1/2 teaspoons sesame oil
Method
- Mix the marinade ingredients in a bowl, then add the shrimp and coat them well. Allow them to sit for 20-25 minutes.
- While the shrimp marinates, combine all the ingredients for the sauce in a separate bowl.
- Prepare the chillies by slicing them lengthwise. Remove the seeds with a knife tip, then chop the peppers into 1/4-inch pieces.
- Place a large wok or skillet over high heat. Cook half of the marinated shrimp for 2 minutes, until they turn pink, then transfer them out.
- Add 1 Tbsp oil to the same pan and stir-fry the remaining shrimp in the same way before removing them.
- Use a paper towel to wipe the pan clean.
- Pour the remaining oil into the pan and heat it.
- Add the chopped chillies and garlic to the hot oil and stir-fry for 10 seconds, just until the peppers begin to brown.
- Toss in the green onions and red bell pepper pieces and cook for 1 minute.
- Pour the prepared sauce mixture into the pan. Cook while stirring until it comes to a boil and thickens.
- Return all the cooked shrimp to the pan, add the sesame oil, and stir everything to combine.
- Dish up the stir-fry right away for serving.
