Spicy Pepper Plum Jam
This recipe guides you through creating a vibrant plum jam with a spicy kick from Thai peppers. The process involves blending fresh fruit, then cooking it with sugar until it reaches the perfect setting point. The finished preserve is sealed in sterilised jars using a water bath method, yielding 8 pints of a versatile condiment ideal for enhancing cheeses, meats, or breakfast treats.
Ingredients
- 8 cups plums, pitted
- 3 Thai peppers
- 1/2 cup water
- 6 cups sugar
Method
- Place the plums, Thai peppers, and water into a blender and process until smooth.
- Pour this mixture into a large cooking pot and add the sugar.
- Gradually heat the contents, stirring continuously until all the sugar has fully dissolved.
- Once dissolved, increase the heat and boil the jam briskly until it reaches the gelling stage.
- Stir the jam often as it cooks and thickens to stop it from catching on the base of the pot.
- When the gelling point is achieved, take the pot off the heat and ladle the hot jam into prepared sterilised jars, leaving a 1/4 inch gap at the top.
- Secure the lids and process the filled jars in a water bath for 15 minutes.
