Spicy Peach Coleslaw

Ingredients

  • 0.25 cup mayonnaise
  • 2 tablespoons rice vinegar
  • 1 tablespoon Asian chile pepper sauce (such as sambal oelek)
  • 1 tablespoon vegetable oil
  • 0.5 lemon, juiced
  • 1.5 teaspoons Dijon mustard
  • 0.5 teaspoon white sugar
  • 1 pinch cayenne pepper, or to taste
  • salt to taste
  • 0.5 (2 pound) cabbage - quartered and thinly sliced
  • 2 fresh peaches, pitted and chopped
  • 1 tablespoon thinly sliced fresh chives

Method

  1. Prepare the dressing by whisking together the mayonnaise, rice vinegar, Asian chile pepper sauce, vegetable oil, lemon juice, Dijon mustard, and 0.5 teaspoon white sugar in a bowl until the mixture is smooth. Season with a pinch of cayenne pepper and salt to your taste.
  2. For the coleslaw, put the thinly sliced cabbage into a large bowl. Add the chopped peaches and 3 teaspoons of the thinly sliced fresh chives, then toss gently to combine. Pour the prepared dressing over the cabbage mixture and stir until everything is evenly coated.
