Spicy Noodle Soup
This vibrant clear soup combines vegetable broth with salsa, black beans and corn for a hearty base. Ramen noodles are simmered directly in the pot until tender, absorbing the flavours of chilli powder, cumin and lime. Finished with fresh herbs and a sprinkle of cheese, it's a complete meal that comes together in only 20 minutes, perfect for a speedy lunch or dinner.
Ingredients
- 3 (14 1/2 ounce) cans of ready-to-serve vegetable broth
- 1 (16 ounce) jar salsa
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (11 ounce) can vacuum-packed whole kernel corn, drained
- 1 (5 ounce) package ramen noodles
- 1/3 cup chopped fresh cilantro or 1/3 cup fresh parsley
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon pepper
- 2 tablespoons grated parmesan cheese
Method
- Bring the vegetable broth to a boil in a large Dutch oven.
- Add all the other ingredients except for the parmesan cheese, then lower the heat.
- Allow the soup to cook for 5-6 minutes, giving it an occasional stir, until the noodles have softened.
- Serve the soup with the grated cheese scattered over the top.
