These kofta-style kebabs combine lamb mince with harissa, crumbled feta and grated onion, grilled until perfectly cooked. They are served with a wholesome and vibrant salad made from brown basmati rice, fresh parsley, mint, black olives, cucumber and cherry tomatoes, all dressed with lemon juice and olive oil. This complete Greek-inspired meal is ideal for a satisfying dinner.

Spicy Lamb and Feta Skewers with Greek Brown Rice Salad

Ingredients

  • 300g brown basmati rice
  • 500g lamb mince
  • 1 tbsp harissa
  • 50g feta cheese
  • 1 large red onion 1/2 thinly sliced, 1/2 grated
  • large handful parsley roughly chopped
  • large handful mint roughly chopped
  • 85g pitted black kalamata olive quartered
  • 1 cucumber diced
  • 300g cherry tomato halved
  • 1 tbsp olive oil
  • juice 1 lemon

Method

  1. Submerge 12 wooden skewers in water and leave them to soak for 30 mins. Prepare the brown basmati rice according to the packet directions. Once cooked, rinse it under cold running water and drain it well.
  2. Turn on your grill. In a bowl, combine the lamb mince with the harissa paste, crumbled feta cheese and the grated portion of the red onion. Season this mixture. Shape it into 12 sausage forms and push each one onto a pre-soaked skewer. Place them on a non-stick baking tray and grill for 6-8 mins, turning them during cooking until they are browned and cooked through.
  3. Combine the cooled brown rice with the sliced red onion, chopped parsley and mint, quartered olives, diced cucumber and halved cherry tomatoes. Add the olive oil and lemon juice, then season to taste. Serve this rice salad with the hot lamb skewers.
