Spicy Jalapeno and Bell Pepper Chili
This robust bean chili delivers a serious kick, combining ground beef with a colourful mix of diced bell peppers, jalapeno, and onion. The mixture is simmered slowly in a crock pot with tomato paste, spices, and two types of beans, including the sauce from the chili beans, to create a thick, flavourful dish. It is an ideal meal for a crowd, best served with fresh bread or crunchy corn chips to help balance the heat. The long cooking time allows all the ingredients to meld together perfectly.
Ingredients
- 1 1/2 lbs hamburger
- 24 ounces tomato paste
- 6 ounces water
- 2 cans spicy chili beans (with sauce)
- 1 (15 ounce) can dark red kidney beans
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- yellow bell pepper, diced
- 1 jalapeno pepper, diced
- 1 medium white onion
- 2 teaspoons pepper
- 1 teaspoon salt
- 1 teaspoon garlic salt
- 2 teaspoons cayenne pepper
- 3 teaspoons chili powder
- 1/2 ounce Tabasco sauce
Method
- Brown the ground beef in a pan.
- Prepare the green, red, and yellow bell peppers, the jalapeno, and the onion by dicing them.
- Place all the ingredients into a medium or large crock pot and combine them.
- Drain the liquid from the dark red kidney beans before adding, but keep the sauce from the spicy chili beans.
- Add the gravy from the chili beans to the pot, then set it to cook on a low setting for 6-8 hours.
- Stir the chili occasionally during cooking to ensure everything is well incorporated.
- Serve the finished chili and enjoy it.
