Spicy Glazed Shrimp
This dish features succulent shrimp coated in a rich, spicy glaze that is prepared a day in advance. The glaze combines butter, paprika, cayenne, tomato paste, and garlic, blended into a smooth paste. The shrimp are quickly sautéed in olive oil before being tossed in the glaze until lightly caramelised. It is an impressive yet straightforward option for a gathering, best served warm or at room temperature.
Ingredients
- 1 cup butter, cut into small pieces
- 1 tablespoon paprika
- 1 tablespoon cayenne
- 1/2 cup tomato paste
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- 5 garlic cloves
- 3 tablespoons olive oil
- 2 lbs shrimp, size 31 to 40, peeled and deveined, tails on
Method
- To make the glaze, put all the glaze ingredients into a 2-quart saucepan and warm over low heat until the butter has fully melted.
- Transfer the mixture to a blender or food processor and blend on high speed to create a completely smooth paste.
- Place the glaze in the refrigerator and leave it overnight before you plan to use it.
- Pour the 3 tablespoons of olive oil into a 12-inch saute pan and place it over high heat.
- Introduce the shrimp to the hot pan, stirring them constantly to ensure they cook through evenly.
- When the shrimp have turned pink, pour in approximately 1/2 to 3/4 of the prepared glaze, continuing to move the shrimp around the pan.
- Keep stirring until the glaze coats every shrimp and begins to caramelise lightly on their surface.
- You can add more of the sauce according to your preference after tasting.
- Take care not to leave the shrimp cooking for too long.
- Present the shrimp while they are still warm or allow them to reach room temperature before serving.
