These crisp chicken wings are coated in a sticky, aromatic glaze made from sweet chilli sauce, soy, fresh ginger, and garlic. They are first air fried, then tossed in the spicy sauce and finished with fresh herbs and sesame seeds for a vibrant, flavourful dish that is ideal for sharing. The recipe yields enough for four people and takes just over an hour to prepare and cook.

Spicy Ginger Asian Wings

Ingredients

  • 16 chicken wings (drumsticks)
  • 1/2 cup cornstarch
  • 4 tablespoons olive oil
  • 8 ounces sweet chili sauce (Mae Ploy, etc)
  • 2 tablespoons soy sauce
  • 2 tablespoons minced garlic
  • 1 tablespoon fresh ground ginger (skin then use a microplaner)
  • 1/2 tablespoon sambal chili paste
  • 1/2 tablespoon lime juice
  • 1 bunch fresh cilantro, stems removed and minced
  • 1 tablespoon sesame seeds
  • 1 tablespoon green onion, finely chopped

Method

  1. Combine the sweet chilli sauce, soy sauce, minced garlic, ground ginger, sambal paste, and lime juice in a small saucepan.
  2. Heat the mixture gently, stirring now and then, until it thickens slightly.
  3. Brush the chicken wings with olive oil, then dredge them thoroughly in cornstarch.
  4. Place the coated wings in your air fryer and cook them for 10 minutes at 350º.
  5. Take the wings out and brush them generously with the prepared chilli sauce.
  6. Return the sauced wings to the air fryer for a further 10 minutes at 350º.
  7. Transfer the cooked wings to a large mixing bowl.
  8. Pour over the remaining sauce, then add the minced cilantro, sesame seeds, and chopped green onion.
  9. Toss everything together until the wings are evenly coated before serving.
