Spicy Garlicky Calamari
This recipe creates a deliciously crispy and spicy calamari dish. Squid pieces are coated in egg and flour before being deep-fried until golden. Ingredients
- 6 pieces of raw squid
- 2 beaten eggs
- 1 cup chopped garlic
- 1/4 cup jalapeno pepper, seeded and diced (1 tsp. red chili flakes can be substituted)
- 1/4 cup cilantro, finely chopped
- flour, as needed
- salt and pepper, as needed
- vegetable oil, as needed
- 1/2 cup water
- 1 cup brown sugar
- 1/2 cup rice vinegar or 1/2 cup white vinegar
- 3 tablespoons chopped garlic
- 3 tablespoons garlic and red chile paste
- kosher salt, as needed
- cornstarch, as needed
Method
- Begin by preparing the calamari. Place the sliced squid into the beaten eggs.
- Remove the squid from the egg, letting any excess drip off, then coat it in the seasoned flour.
- Deep fry the floured squid pieces until they become golden brown and tender.
- Heat a sauté pan and cook the chopped garlic, jalapeno pepper, and coriander. Add the fried squid to the pan and toss everything together, seasoning with salt and pepper to your taste.
- Serve the calamari with lemon slices and the sweet garlic sauce on the side.
- To make the garlic sauce, mix the water and vinegar in a saucepan and bring to a boil.
- Stir in the brown sugar, chopped garlic, garlic and red chile paste, and kosher salt into the hot liquid. Let the mixture simmer.
- Thicken the simmering sauce by adding a cornstarch slurry.
- The finished sauce is ready to be served alongside the fried calamari.
