Spicy Garlicky Beef Marinade
This flavourful marinade combines spicy jalapenos, aromatic elephant garlic and fresh cilantro with a blend of spices and citrus. It creates a robust, tangy mixture ideal for marinating around 2 lbs of beef, such as for carne asada. The recipe is quick to prepare, taking only 15 minutes, and yields enough for four servings.
Ingredients
- 0.5 cup extra virgin olive oil
- 4 tablespoons lime juice
- 3 jalapeno peppers, seeded and minced
- 1.5 tablespoons white vinegar
- 1 tablespoon Worcestershire sauce
- 0.25 bunch chopped fresh cilantro
- 2 cloves elephant garlic, chopped
- 1 teaspoon white sugar
- 1 teaspoon ground paprika
- 0.5 teaspoon ground cumin
- 0.5 teaspoon garlic powder
- 0.25 teaspoon cayenne pepper
- salt and freshly ground black pepper to taste
Method
- In a large glass bowl, mix together the extra virgin olive oil, lime juice, minced jalapenos, white vinegar, Worcestershire sauce, chopped cilantro, chopped elephant garlic, white sugar, ground paprika, ground cumin, garlic powder, cayenne pepper, salt and black pepper.
- Place your chosen meat into the bowl with the marinade, ensuring it is fully coated. Cover the bowl and place it in the refrigerator for 2 hours. During this time, the acidic components will cause the meat's colour to change from bright red.
