Spicy Garlic Thai Shrimp and Sauteed Kale
This vibrant dish combines succulent shrimp marinated in a punchy blend of chilli-garlic sauce, lime, and fish sauce, then stir-fried until perfectly cooked. It is served over a bed of quickly sauteed fresh kale, which wilts down beautifully. The whole meal comes together in only 22 minutes, offering a satisfying balance of spicy, savoury, and fresh flavours ideal for a speedy lunch or snack.
Ingredients
- 2 tablespoons chili-garlic sauce
- 1 tablespoon minced garlic
- 1 tablespoon dark brown sugar
- 1 tablespoon fresh lime juice
- 3 teaspoons fish sauce
- 1 lb large shrimp, peeled and deveined
- 5 cups fresh kale (seems like a lot but it cooks down!)
- 3 tablespoons oil
- fresh cracked pepper
Method
- Combine the chilli-garlic sauce, minced garlic, brown sugar, lime juice, and 2 teaspoons of the fish sauce in a medium bowl, stirring thoroughly.
- Place the peeled shrimp into the bowl and toss them until they are fully coated in the sauce. Allow them to sit and marinate.
- Transfer the shrimp and its marinade to a hot skillet. Cook, stirring frequently, until the shrimp have turned pink and opaque and the sauce is well incorporated.
- Heat 2 tablespoons of oil in a separate wok or skillet. Add the chopped kale and cook it for 3 to 4 minutes, stirring as it sautes.
- Arrange the cooked kale on a serving platter. Spoon the hot shrimp and sauce directly over the top before serving.
