Spicy Garlic Shrimp With Fettuccine
This dish features fettuccine pasta coated in a rich, creamy sauce made with white wine, garlic, and herbs. Plump shrimp are sautéed with chilli flakes and butter, then served atop the pasta. The combination creates a flavourful and satisfying meal with a gentle spicy note. It is designed to be prepared and on the table within 45 minutes, serving four people.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1/2 cup butter
- 8 -10 garlic cloves, chopped
- 1/2 cup white wine
- 1/2 lemon
- 1/4 teaspoon lemon pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1/2 teaspoon thyme
- 1/4 teaspoon red chili pepper flakes
- 1 tablespoon cornstarch
- 1 cup half-and-half
- 1 (9 ounce) package fettuccine pasta, prepared as directed
Method
- Combine the white wine, juice from half a lemon, lemon pepper, oregano, basil, and thyme in a small saucepan. Whisk and let it reduce over medium-low heat until you have roughly 1/2 cup.
- Melt half a stick of butter in a skillet and cook the chopped garlic for approximately 4 minutes.
- Stir the red chilli pepper flakes into the garlic butter and cook for about 1 minute.
- Place the shrimp in the skillet and cook them for around 5 minutes, until they turn pink.
- Take the cooked shrimp out of the pan, keeping any remaining liquid in the skillet.
- Pour the reserved skillet liquid into the saucepan with the reduced wine. Whisk well and increase the heat to medium.
- Add the remaining half stick of butter, sliced, to the saucepan. Keep whisking until the butter has fully melted.
- In a small separate bowl, mix the cornstarch with a little half-and-half to form a smooth paste. Whisk this into the saucepan until the mixture is smooth and starts to thicken.
- Pour in the rest of the half-and-half, whisking continuously until the sauce reaches your preferred thickness.
- Toss the prepared fettuccine pasta in the sauce until it is evenly coated.
- Plate the sauced fettuccine and arrange the sautéed shrimp on top to serve.
