Spicy Garlic Lime Chicken
This zesty chicken dish delivers a punch of flavour. Chicken breasts are generously seasoned with a blend of spices including cayenne, paprika and herbs. They are then pan fried in a mix of margarine and oil until beautifully browned. Ingredients
- 4 chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried parsley
- 2 tablespoons margarine
- 1 tablespoon olive oil
- 2 teaspoons garlic powder
- 3 tablespoons lime juice
Method
- Combine the salt, black pepper, cayenne pepper, paprika, 1/4 teaspoon garlic powder, onion powder, dried thyme and dried parsley in a small bowl.
- Pat the chicken breasts dry and rub the prepared spice mix all over both sides of each piece.
- Place a large, heavy skillet on the cooker and add the margarine and olive oil, allowing them to melt together.
- Cook the seasoned chicken in the hot fat for approximately 6 minutes per side, until it develops a golden brown crust.
- Sprinkle the remaining 2 teaspoons of garlic powder over the chicken, followed by the lime juice.
- Continue cooking for another 5-10 minutes, turning the chicken pieces often to ensure they are well coated in the pan sauce.
