Spicy Garlic Italian Beef Sandwiches

This recipe creates tender, slow-cooked beef sandwiches packed with spicy and garlicky flavours. A chuck roast is simmered with beef broth, dark beer, pepperoncini peppers and garlic for several hours until it falls apart. The shredded meat is then served on warm, toasted Italian bread spread with garlic butter and topped with melted provolone cheese, along with the cooking juices and peppers.

Spicy Garlic Italian Beef Sandwiches

Ingredients

  • 4 lbs chuck roast
  • 2 (12 ounce) cans beef broth
  • 36 ounces dark beer, choice
  • 20 ounces pepperoncini peppers, drained and chopped
  • 1 dash pepperoncini pepper juice
  • 2 fresh garlic cloves, minced
  • 1 loaf fresh Italian bread
  • butter
  • 8 slices provolone cheese

Method

  1. Put the chuck roast into a slow cooker.
  2. Pour the beef broth and dark beer over the roast to cover it.
  3. Mix in the chopped pepperoncini peppers, a dash of their juice, and one minced garlic clove.
  4. Set the cooker to high and leave it for 1-2 hours.
  5. Switch the setting to low and continue cooking for another 6-8 hours.
  6. Use a fork to shred the meat once it is tender enough to pull apart.
  7. Before serving, make garlic bread by spreading butter and the remaining minced garlic on the Italian loaf.
  8. Toast the prepared bread with slices of provolone cheese on top until the cheese melts and turns a light golden colour.
  9. Assemble the sandwiches by piling the shredded beef, peppers, and some of the cooking juice onto the toasted cheese bread.
