Spicy Garlic Ginger Roti
This recipe guides you through creating a layered flatbread with a dry, aromatic filling of grated ginger, garlic, and fresh coriander. The process involves making a soft dough, preparing a spiced mixture, and assembling the rotis by layering and rolling. They are then shallow-fried until golden. The recipe yields 9 rotis and takes about 45 minutes to complete. These breads are ideal served warm with accompaniments like fresh curds or chutney.
Ingredients
- 2 cups wheat flour
- 1/2 cup plain flour
- 2 tablespoons ghee
- 4 tablespoons dry wheat flour
- 1 tablespoon rice flour
- 2 teaspoons ginger, grated
- 2 teaspoons garlic, grated
- 4 tablespoons coriander leaves, chopped very fine
- 1 teaspoon fresh ground black pepper
- salt
- 1/2 cup ghee
Method
- Combine the wheat flour, plain flour, and salt in a bowl.
- Work the 2 tablespoons of ghee into the flour mixture.
- Pour in warm water gradually to create a soft, manageable dough.
- Place a damp cloth over the dough and let it rest for 30 minutes.
- Ensure the spicy filling mixture remains dry in texture.
- Separate the rested dough into 9 equal pieces.
- Shape one piece into a ball and roll it out to a 7-inch circle.
- Use the dry wheat flour to prevent sticking while rolling.
- Lightly coat the surface of the rolled dough with ghee.
- Scatter a portion of the spicy mixture evenly over the ghee.
- Roll out a second piece of dough and lay it on top of the first.
- Brush this layer with ghee and sprinkle more of the mixture.
- Add a third layer of rolled dough, finishing with the remaining spicy mixture.
- Press the stack gently and roll it up tightly like a Swiss roll.
- Slice the rolled log into 3 equal segments.
- Lightly dust these pieces with the reserved dry flour.
- Set them aside for now.
- Repeat the entire layering process with the remaining six dough balls to create two more rolls.
- Take one dough segment, give it a slight twist, and press it flat.
- Dust it with flour and roll it into a thick circle.
- Cook on a hot griddle, drizzling ghee on each side while shallow frying.
- Press down lightly and fry until each side turns a golden brown colour.
- Continue cooking all the remaining pieces.
- Enjoy the rotis while hot, accompanied by fresh curds, sauce, jam, or a chutney of your choice.
