Spicy Garlic Ginger Roti

Ingredients

  • 2 cups wheat flour
  • 1/2 cup plain flour
  • 2 tablespoons ghee
  • 4 tablespoons dry wheat flour
  • 1 tablespoon rice flour
  • 2 teaspoons ginger, grated
  • 2 teaspoons garlic, grated
  • 4 tablespoons coriander leaves, chopped very fine
  • 1 teaspoon fresh ground black pepper

  • 1/2 cup ghee

Method

  1. Combine the wheat flour, plain flour, and salt in a bowl.
  2. Work the 2 tablespoons of ghee into the flour mixture.
  3. Pour in warm water gradually to create a soft, manageable dough.
  4. Place a damp cloth over the dough and let it rest for 30 minutes.
  5. Ensure the spicy filling mixture remains dry in texture.
  6. Separate the rested dough into 9 equal pieces.
  7. Shape one piece into a ball and roll it out to a 7-inch circle.
  8. Use the dry wheat flour to prevent sticking while rolling.
  9. Lightly coat the surface of the rolled dough with ghee.
  10. Scatter a portion of the spicy mixture evenly over the ghee.
