Spicy Garlic Dill Pickles
This recipe guides you through creating homemade spicy garlic dill pickles. The process involves soaking small cucumbers overnight before packing them into sterilised jars. A hot brine of vinegar, water, and pickling salt is prepared and poured over the cucumbers. Each jar is then seasoned with garlic cloves, fresh dill, alum, and hot peppers. After sealing, the jars are stored in a cool, dark location for approximately 30 days until the pickles are ready to enjoy.
Ingredients
- 36 small cucumbers
- 1 quart vinegar
- 2 quarts water
- 3/4 cup pickling salt
- 18 garlic cloves
- 12 sprigs fresh dill (or 3T whole dill seed)
- alum
- 12 hot peppers (or 6 chili peppers and 6 jalepenos)
Method
- Soak the cucumbers in cold water overnight. After draining, pack them firmly into sterilised quart-sized Mason jars.
- Bring the vinegar, water, and pickling salt to a boil in a large pan.
- Carefully pour the hot brine over the cucumbers in each jar.
- To every jar, add 2 or 3 garlic cloves, a sprig of dill, 1/8 teaspoon of alum, and 2 hot peppers.
- Place the sealed jars in a cool, dark spot for storage. The pickles will be ready in about 30 days.
