Spicy Garlic Chicken With Lemon Glaze
This dish features chicken breasts coated in a seasoned garlic and oregano panko crust, then pan fried until golden. The chicken is finished with a sticky, vibrant glaze made from fresh lemon juice, honey, and a kick of Tabasco sauce, creating a perfect balance of sweet, spicy, and tangy flavours in under half an hour.
Ingredients
- 2 boneless skinless chicken breasts
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 1/4 cup panko breadcrumbs
- 2 teaspoons garlic, minced
- 1/4 teaspoon dried oregano
- 2 tablespoons fresh lemon juice
- 2 tablespoons honey
- 2 teaspoons Tabasco sauce
- 1 teaspoon lemon zest, minced
- 2 teaspoons extra virgin olive oil
Method
- Sprinkle the salt and pepper over the chicken breasts.
- Mix the panko breadcrumbs with the minced garlic and dried oregano in a shallow dish, then press each chicken breast into the mixture to coat both sides.
- For the glaze, whisk together the fresh lemon juice, honey, Tabasco sauce, and minced lemon zest in a small bowl and set it aside.
- Warm the olive oil in a nonstick skillet. Cook the coated chicken until it is browned on both sides and fully cooked, which should take about 12 minutes. Transfer the chicken to a plate.
- Pour the prepared glaze into the same skillet and let it bubble until it thickens to a syrupy consistency, which takes less than a minute.
- Place the chicken back into the skillet, turning each piece once to ensure it is fully covered in the glaze.
- Plate the chicken and serve immediately.
