Spicy Garden Salsa
This is a robust and hot Mexican salsa featuring pronounced flavours of onion and garlic. It is not a sweet version, with white vinegar providing a key sharp note. The recipe relies on selecting good quality, standard tomatoes for the best result. It yields approximately 3 cups, serving six people, and requires only 10 minutes of active preparation time.
Ingredients
- 3/4 medium red onions or 6 1/2 ounces red onions
- 2 -3 large jalapenos or 3 1/2 ounces jalapenos
- 1 ounce cilantro
- 3 medium tomatoes or 16 ounces tomatoes
- 1 1/2 teaspoons salt
- 1 tablespoon white vinegar
- 4 teaspoons minced garlic
Method
- Place the peeled red onion, salt, white vinegar and minced garlic into a blender.
- Add the tomatoes to the blender. Standard tomatoes, ideally vine ripened, are recommended for superior flavour.
- Put the jalapeños into the blender. For more heat, include the seeds. for a milder salsa, remove them. Note that solid green jalapeños are milder, while those with white striations are hotter.
- Take the leafy end of the cilantro, removing the thicker stems at the bottom, and add the leafy part to the blender.
- Blend all the ingredients coarsely, then refrigerate the salsa for at least 2 hours to let the flavours combine.
